I'm trying to get back to BOINC after a long hiatus but the app won't install, with google play protect citing "This app was built for an older version of Android and doesn't include the latest privacy protections"

If that is the version from the play store, it won't work. You need to download the apk If you downloaded from here then I don't know, perhaps try the development version 8.0.4?

I received the "built for an older version" when installing 8.2.1 on an Android 15 tablet I bought today. I was able to click past the warning, and it's running now.
